The MAN Omelette is a terrific high protein breakfast, lunch or dinner. It’s quick and easy and tastes delicious!
- 1 chicken breast (250g)
- 2 eggs
- 6 egg whites
- 1/2 red onion
- 1 cup mushrooms (diced)
- 1 cup capsicum (diced)
- 1 tablespoon light cottage cheese
- 1/2 a tomato (diced)
- 1 teaspoon sweet chilli sauce
- cracked pepper (to serve)
- 1 slice wholemeal bread (optional)
- Grill 1 chicken breast (250g) in pan, lightly spray with olive oil.
- Remove chicken breast from pan and add egg whites and eggs.
- Add red onion, diced mushrooms, diced capsicum, diced tomato, light cottage cheese, and sweet chilli sauce.
- Mix until cooked.
- Add cooked diced chicken breast and mix.
- Add cracked pepper and serve.
- (Optional) eat with 1 slice wholemeal bread.
