This is honestly one of the quickest and tastiest recipes you can whip up at home. Serve it up with a premade salad pack and you’re good to go for dinner or pre-packed lunch the next day.

  • 500g lean ground beef
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 red capsicum, diced
  • 1 egg
  • 1⁄2 cup buckwheat flour (30g)
  • 1⁄4 cup coriander, chopped
  • 1 tsp oregano
  • 12 slices streaky bacon

1. Preheat the oven to 200°C.

2. Place all the ingredients apart from the bacon in a bowl, season with salt and pepper, and mix well using your hands.

3. Once everything is well combined, form 12 meatballs the size of a golf ball (use a 1⁄4 cup for measuring).

4. Wrap each meatball in a slice of bacon and place it on a baking sheet.

5. Bake for 20 minutes. For the last 4-5 minutes, set the oven to grill/broil for the meatballs to have a crispy outside layer.
