- 8 mini tortilla stand N stuff boats
- 4 eggs
- 2 egg whites
- dash of almond milk
- 100g ham, chopped
- 50g low-fat cheese or mozzarella
- onion
- spinach
- garlic
Method
- Whisk together eggs, egg whites, and a dash almond milk. Season with salt and pepper.
- Add chopped ham, onion, spinach, garlic and cheese to egg mixture and pour evenly into each taco boat.
- Oven bake at 180 degrees until egg cooked (approx 20 minutes).
