  • 8 mini tortilla stand N stuff boats
  • 4 eggs
  • 2 egg whites
  • dash of almond milk
  • 100g ham, chopped
  • 50g low-fat cheese or mozzarella
  • onion
  • spinach

Method

  1. Whisk together eggs, egg whites, and a dash almond milk. Season with salt and pepper.
  2. Add chopped ham, onion, spinach, and garlic to egg mixture and pour evenly into each taco boat.
  3. Oven bake at 180 degrees until egg cooked (approx 20 minutes).
