Ingredients

  • 10 eggs (6 eggs, 4 whites)
  • 3 cubes frozen spinach (or 75g thawed)
  • 100g lean ham (diced)
  • 1/2 cup reduced-fat cheese (grated)
  • 1/4 cup milk

Method

  1. Preheat oven to 180 degrees
  2. In a bowl mix eggs, egg whites and milk till fluffy then add cheese and ham
  3. Thaw spinach in the microwave for approx. 2 minutes and squeeze the juice out before adding to the bowl
  4. Stir all the ingredients together
  5. Grab a non-stick frypan and spray with oil (put baking paper on the bottom so it doesn't stick)
  6. Pour ingredients in and cook for approximately 30 minutes (or until golden)
  7. Stick your knife in the centre and pull it out checking to see if the egg sticks to it (if the egg sticks it's not cooked enough)
  8. Cut, serve and enjoy!
