Still think salads are just rabbit food? This bad boy beef and haloumi salad recipe will change your mind. It's a protein-packed summer go-to with juicy strips of beef and golden halloumi chunks - you can even prep it on the barbecue.

Serves 1 - 321 calories

Ingredients

  • 100g lean steak cut into strips or lean beef strips
  • 30g halloumi, cut into slices
  • 100g pumpkin, cut into cubes
  • 1 Tbsp balsamic glaze
  • 1/2 red capsicum, chopped finely
  • 1/4 red onion, finely sliced
  • 1 cup baby spinach
  • 1/2 cucumber, sliced

Method

  1. Preheat oven to 180 degrees
  2. Line a baking tray with baking paper
  3. Place pumpkin on the tray and cook for 30 minutes or until roasted and golden
  4. Meanwhile, heat a non-stick pan over medium to high heat
  5. Cook the beef until cooked to your liking and set aside to rest
  6. In the same pan fry the halloumi until golden brown
  7. Assemble salad ingredients and cooked beef, pumpkin and halloumi together and top with the balsamic glaze
  8. Serve and enjoy!
