Here is some home made Mexican that tastes good and is actually great for you. High in protein, this is one the whole family will love.
- 300g lean beef sliced
- low fat grated cheese
- 1/4 onion
- salsa (whatever strength of spice you prefer)
- 1/2 red capsicum
- 2 multigrain mission tortillas
- 1 lime
- Heat fry pan and cook sliced beef and chopped onion and capsicum (approx. 8 mins).
- Heat tortillas in microwave approx. 30 secs.
- Put beef and onions into tortillas and add toppings (spread across the 2).
- Top with cheese, salsa and lime juice.
