Ingredients

  • 150g banana, mashed
  • 3/4 cup gluten-free wholemeal flour
  • 1/4 cup walnuts
  • 1 tbsp coconut flour
  • 50g the man shake powder
  • 2 tsp cinnamon
  • 1/4 cup yoghurt
  • 1/4 cup almond milk
  • 3/4 cup egg whites
  • 1 tsp vanilla extract
  • 1 tsp bicarb soda
  • 1 tsp baking powder

Method

  1. Preheat oven to 180 degrees Celcius. Grease a 6 hole silicone muffin tray.
  2. In a bowl, combine all of the wet ingredients. Add in the dry ingredients and mix well. Fold in the walnuts.
  3. Pour the mix evenly between the 6 muffin holes.
  4. Bake for 30 minutes or until a skewer comes out clean. Allow to cool slightly before removing from the muffin tray.
