INGREDIENTS

  • 500g chicken breasts (approx 4 x chicken breast)
  • 3 tbsp. pesto sauce (Woolies or Coles)
  • 85g mozzarella cheese
  • sliced tomato
  • Optional Serve with salad mix

METHOD

  1. Butterfly, bash or slice the chicken breasts so they are quite thin and in 4 serves.
  2. Cook on a nonstick fry pan until cooked through or in the oven on a lined baking tray (200 Degrees, 16-20 mins)
  3. Once cooked, transfer to a baking tray if you cooked them in a pan and top with the pesto, sliced tomato then cheese.
  4. Oven bake or grill for approximately 10 minutes, or until cheese is golden.
  5. Serve with a side salad or vegetables.
